You will need to start preparing this drink the day before. Place agar agar in a medium saucepan with 200ml cold water and allow to sit for 2 hours until soft.

Once soft, place the saucepan on medium heat, stirring repeatedly until agar agar has completely dissolved.
Stir in 2 tbsp raw sugar and bring to the boil, stirring until sugar has completely dissolved.

Transfer to a heat-proof dish, allow to cool, and then refrigerate overnight to set into a mousse.
The next day, grate the agar agar mousse and set aside.
Place basil seeds in a large bowl. At this point, you can check the seeds and pick out any that you don’t like the look of. Add 8 cups of cold water to the seeds and stir to loosen seeds. Set aside for 30 minutes or until the seeds have expanded.
3 tbsp basil seeds
Once seeds have expanded, stir in condensed milk followed by regular milk and agar agar mousse gratings.
375 ml condensed milk, 750 ml milk
Stir in the rose water and 3 drops of the food colouring, then mix well.

Transfer to a jug, keep refrigerated and serve chilled in a glass over ice.
Notes
This recipe requires preparation one day in advance which is not included in the prep time.
Agar agar and basil seeds can be found in your local Asian grocery store. If you can't locate basil seeds, chia seeds are a suitable alternative.
Try serving over a scoop of vanilla ice cream instead of ice for a creamy treat.
Additional sugar can be added to taste.
Best kept up to a day or as per milk expiration date.
If you prefer to have a green Alouda, replace the rose water with 1/4 tsp of almond essence and use green food colouring instead.
