About Gato Banann

Gato Banann is a Mauritian deep-fried snack made by frying a banana batter that consists of ripe banana, flour and milk. It is essentially a banana fritter and there are many variations of this snack made around the world.

In French, it is known as Gateau Banane. In Chinese it is called 炸香蕉 which directly translates to ‘fried banana’. And in Vietnamese, it is known as Chuối Chiên.

Even though each recipe is slightly different, this is one of those amazing dishes that brings together every part of my heritage and I love imagining that at some point in time my ancestors, in their different parts of the world, were enjoying the same snack. I hope you enjoy it too.

Prepping Tips

It is important to drain the oil from deep-fried foods like Gato Banann. There are a few reasons why:

  1. It can improve the taste by allowing the natural flavours to come through.
  2. It can improve the texture by removing the excess oil and leaving the deep-fried food lighter and less greasy.
  3. It is healthier because draining the oil removes the extra fat and calories.

When I am deep-frying anything, I like to line a plate with a couple of sheets of paper towel to soak up the excess oil. Generally, I find this is enough to drain the oil to my liking.

Add the flour, sugar, baking powder, milk and egg (if you are using) to the bananas and mix well. You should get a thick batter about the consistency of porridge or cooked oatmeal.

Heat up the oil for frying and when the oil is ready, drop a tablespoon of batter into the hot oil for each ball of Gato Banann.

How to Serve Gato Banann

Gato Banann are best served once they are well drained of oil but while they are still hot. Moreover, you can keep them in an airtight container in the fridge for up to 2 days.

If they are kept for longer than 2 days, they will start to lose their texture and taste stale. To keep Gato Banann for longer, you can freeze them for up to 2 months. Simply reheat in the oven or air fryer before eating.

Notes

  1. The whole milk can be substituted with a plant-based milk such as soy milk, coconut milk or oat milk. You can even substitute it with water if you don’t have any milk readily available.
  2. Adding egg to the Gato Banann recipe can further add structure and moisture. However, if you or anyone you are cooking for has dietary restrictions, then the egg is not necessary.Fortunately, the bananas more than make up for the absence of the eggs in providing structure and moisture.
