About Fricassée?
Fricassée is a stew made with pieces of meat that have been browned. It is a word of French origin that is a combination of frire (to fry) and casser (to break into pieces). Some of the proteins most commonly used in this dish are chicken, beef and a variety of different fish.
The Mauritian version of fricassée is slightly different to the original French recipe. This is due to the African influence in the spice mix. And Fricassée de Sardines aux Bringelles highlights the mixed heritage of our beautiful island nation.
