Slice eggplants and put aside in salt water.

Dice onions and gently fry in rice bran oil until golden. Add crushed garlic and grated ginger. Stir for 1 minute then add green chilli. Simmer for 3-4 minutes.

Add 1/4 cup of water and cook for another 2 minutes.

Add tomatoes, salt to taste and let sauce thicken on low heat.

Add sardines, thyme, parsley and another 1/4 cup of water. Mix well and let simmer for another 5 minutes.

  • 1 brown onion diced
  • 2 green chillies
  • rice bran oil
  • 2 cloves garlic crushed
  • 1 knob ginger grated
  • 400 g tomatoes diced
  • 10 sardines
  • 1 tbsp thyme
  • 1 tbsp parsley
  • salt to taste
