About Alouda

Alouda is a milk based cold drink that draws its inspiration from the Indian drink Falooda. Falooda has been popular for generations in India where the locals enjoy its digestive virtues following a spicy meal.

The Indian Mughlai version is typically made by mixing rose syrup, vermicelli and basil seeds (tokmarya) topped with a dollop of ice cream.

On the other hand, Alouda typically contains agar agar and tokmarya. We’ll tell you a bit more about those two ingredients later. Furthermore, you can find three different flavours of Alouda: almond, vanilla and strawberry.

Where to Find Alouda in Mauritius

Actually, the best place to find a traditional Alouda in Mauritius would have to be Bazar Port-Louis. This large multi-purpose market in the island’s capital city is home to one of the pioneers of Alouda, Pillay.

Having said this, you can most probably find a hawker selling Alouda at almost any market around the island. Moreover, some supermarkets sell a more commercial version of this drink.

  • Agar agar and basil seeds can be found in your local Asian grocery store. If you can’t locate basil seeds, chia seeds are a suitable alternative.
  • Try serving over a scoop of vanilla ice cream instead of ice for a creamy treat.
  • Additional sugar can be added to taste.
  • Best kept up to a day or as per milk expiration date.
  • If you prefer to have a green Alouda, replace the rose water with 1/4 tsp of almond essence and use green food colouring instead.

Here’s a summary of the steps you need to follow to make Alouda.

You will need to start preparing this drink the day before. Place agar agar in a medium saucepan with 200ml cold water and allow to sit for 2 hours until soft.

Once soft, place the saucepan on medium heat, stirring repeatedly until agar agar has completely dissolved.

Stir in 2 tbsp raw sugar and bring to the boil, stirring until sugar has completely dissolved.

Transfer to a heat-proof dish, allow to cool, and then refrigerate overnight to set into a mousse.

The next day, grate the agar agar mousse and set aside.

Place tokmarya seeds in a large bowl. At this point, you can check the seeds and pick out any that you don’t like the look of. Add 8 cups of cold water to the seeds and stir to loosen seeds. Set aside for 30 minutes or until the seeds have expanded.

Once seeds have expanded, stir in condensed milk followed by regular milk and agar agar mousse gratings.

Stir in the rose water and 3 drops of the food colouring, then mix well

Transfer to a jug, keep refrigerated and serve chilled in a glass over ice.

  • 375 ml condensed milk
  • 750 ml milk
  • 2 tbsp rose water
