About Glutinous Rice Flour (Nuò Mǐ Fěn)
Actually, this unique type of rice flour has been used in Asian cuisine for centuries. It is believed to have originated in China, where Glutinous Rice has been cultivated since ancient times. Traditionally, the Chinese used this flour in a number of desserts and savoury dishes. We’ll get back to that a little bit later.
Over time, the use of sticky rice flour spread to other countries in Asia, including Japan, Korea, and Thailand. And, of course, Chinese migrants brought it to Mauritius. Today, this flour is a staple ingredient in many traditional dishes throughout the world.
Production
The rice is first soaked in water for several hours, then steamed until it is cooked through. Finally, you dry the cooked rice and grind it into a fine powder.
In some countries, glutinous rice flour is also made from glutinous rice that has been fermented. This process produces a slightly sour and nutty flavour that is particularly popular in Korean cuisine.
Cooking With Glutinous Rice Flour
