Glutinous rice flour, also known as sweet rice flour or sticky rice flour, is a popular ingredient in many Asian dishes. Actually, this unique type of rice flour has been used in Asian cuisine for centuries. It is believed to have originated in China, where Glutinous Rice has been cultivated since ancient times. Traditionally, the Chinese used this flour in a number of desserts and savoury dishes. We’ll get back to that a little bit later.

Over time, the use of sticky rice flour spread to other countries in Asia, including Japan, Korea, and Thailand. And, of course, Chinese migrants brought it to Mauritius. Today, this flour is a staple ingredient in many traditional dishes throughout the world.

Production

The rice is first soaked in water for several hours, then steamed until it is cooked through. Finally, you dry the cooked rice and grind it into a fine powder.

In some countries, glutinous rice flour is also made from glutinous rice that has been fermented. This process produces a slightly sour and nutty flavour that is particularly popular in Korean cuisine.

Cooking With Glutinous Rice Flour

Here are some tips for cooking with this type of rice flour:

  1. Use the right amount of water – When mixing glutinous rice flour with water, it’s important to use the right amount to achieve the desired texture. Generally, a ratio of 1:1 (equal parts flour and water) will result in a sticky, dough-like consistency, while adding more water will create a thinner batter.
  2. Knead the dough – If you’re making a  dough, such as for Mochi or Steamed Buns, be sure to knead the dough thoroughly to develop its elasticity and chewiness.
  3. Cook at a low temperature – This flour can become tough and chewy if overcooked, so it’s best to cook it at a low temperature for a longer period of time.
  4. Experiment with different recipes – Don’t be afraid to try new recipes and experiment with different flavours and textures. Indeed, glutinous rice flour can be used in a variety of sweet and savoury dishes, so the possibilities are endless!
